Loaded Baked Potato Mac and Cheese

  • A comforting homemade mac & cheese made easy with Creamy Potato Soup Mix.

Ingredients

  • 2 1/2 cup milk
  • 1/2 bag Creamy Potato Soup Mix
  • 1/4 tsp pepper
  • 1 lb elbow macaroni, cooked
  • 3 cup shredded cheddar cheese, divided
  • 4 strip bacon, cooked and chopped
  • 3 green onions, finely chopped, divided

Directions

  1. In a large saucepan set over medium heat, bring milk and ½ cup water to simmer.
  2. Whisk in soup mix and pepper. Cook for 2 to 3 minutes or until thickened.
  3. Stir in pasta, 2 cups cheese, bacon and half of the green onions until evenly combined.
  4. Transfer to 9×13-inch baking dish and sprinkle with remaining cheese.
  5. Broil for 3 to 5 minutes or until cheese is melted and golden brown.
  6. Sprinkle with remaining green onions.

Tips

Use mild, medium or aged cheddar cheese.
